Banoffee Bliss
Preparation time: 1hr (including refrigeration time)

This take on a traditional banoffee pie will be a delicious treat for you and your guests. Easy to make and within an hour, from start to finish, it'll be ready to enjoy.

  • 100g Mesa Sunrise
  • 25g butter
  • 50g Pecan nuts
  • 1397g can of condensed milk
  • 90g muscavado sugar
  • 75g butter
  • 2 bananas
  • 200ml double cream
  • 200g crème fraiche
  • dark choc for grating
  • (8 glasses for serving)
  1. Chop pecan nuts, lightly crush Mesa flakes in a plastic bag with a rolling pin.
  2. Place the butter in a microwavable mixing bowl, melt butter for 30 secs and add in pecans and Mesa flakes (& mix well)
  3. Place a big tablespoon into the base of each glass and pop in fridge
  4. Using heavy bottomed pan heat can of condensed milk with sugar and butter stirring all the time and bring to the boil. 
  5. Pour evenly over each cereal mix base and then return to fridge.
  6. Whisk the double cream until at soft peak stage and then add condensed milk - spoon on to top of each pud and put back in fridge for further 30 mins
  7. Grate chocolate just before serving
