Date Crunch Slice
Makes 8

For the date layer:

  • 160g pitted medjool dates, or other dates soaked in boiling water for 20 minutes then drained
  • 20ml water
  • Pinch rock or sea salt

For the crunch layer:

  • 100g Nature's Path O's
  • 50g ground almonds
  • 110g dairy free margarine or butter
  • 40g sugar
  • 1tsp vanilla extract
  1. Place the dates (soaked and drained if using anything other than medjool dates), salt and water into a food processor and whizz until you have a smooth paste
  2. Put the date paste into a bowl, then place the O's and ground almonds into the food processor and process until it forms a powder
  3. Add the margarine or butter, sugar and vanilla extract to the O and ground almond mixture and process until a crumbly dough forms
  4. Press half the dough into a lightly greased dish measuring approx. 22cm x 14cm and press down firmly
  5. Next spread the date paste over the top of the firmed down base layer
  6. Finally scatter the remaining dough mixture across the date layer and firm down a little
  7. Bake in a pre-heated oven at 180 degrees (160 degree fan, gas mark 4) for 40 minutes until golden
  8. Leave to cool in the dish, then cut into approx. 8 slices
