Easy Microwave Salted Caramel Crispie Slices
Gluten-free, dairy-free, egg-free
Serves: 
8 Slices
Ingredients: 
  • 100g golden syrup
  • 60g coconut oil
  • 100g Nature's Path Crispies
  • 2tsp vanilla extract
  • 1/4tsp – 1/2tsp rock or sea salt (depending on how 'salted' you want the caramel)
  • Decorations of choice
Directions: 
  1. Place the syrup, coconut oil, vanilla extract and salt in a microwavable bowl
  2. Microwave for 30 seconds on high power (850watt) then remove and stir carefully
  3. Return to the microwave for a further 30 seconds, remove and stir carefully again
  4. Return to the microwave for 30 seconds more, remove and stir (total time 1 minute 30 seconds)
  5. Leave the hot mixture to cool for about 1 minute
  6. Finally stir in the crispies until combined
  7. Tip into a lightly greased dish measuring approx. 20cm x 20cm and firm down
  8. Set aside for a few hours to cool before cutting into slices
  9. Decorate how you like and store in an airtight container in the fridge
