Lightly Spiced Apple and Blueberry Muffins

Lightly Spiced Apple and Blueberry Muffins
Makes 6
  • 3 sachet's Nature's Path spiced apple oats
  • 120g gluten-free SR flour
  • 50g brown sugar
  • 1tsp baking powder
  • ½tsp bicarbonate of soda
  • 150ml dairy or dairy-free milk
  • 20g coconut oil, melted
  • 2 tbsp apple puree
  • 1 tbsp ground flaxseed's mixed with 3tbsp water to make a 'flax egg'
  • 100g fresh or frozen blueberries
  • 1 sachet plain oats for scattering on top
  1. Mix the ground flax seeds with the water and leave to soak while you prepare everything else
  2. Place all the dry ingredients into a food processor and blend well
  3. Add the milk, coconut oil and apple puree to the dry mixture
  4. Stir the flax/water mixture well then add that to the food processor too
  5. Process the mixture until it just comes together
  6. Finally gently stir in the blueberries by hand
  7. Line a muffin tray with 6 muffin cases
  8. Divide the mixture between the 6 muffin cases, sprinkle with the plain oats and bake in a pre-heated oven at 180 degrees (160 degree fan, gas mark 4) for approx. 25 - 30 minutes until a toothpick inserted into a muffin comes out clean
