Ingredients: 

Ingredients - Base layer

  • 240g Nice & Nobbly Granola (either would be fine)
  • 100g pecans
  • 170g cashew nuts
  • 200g dates
  • 6tbsp melted coconut oil (flavourless if you have it – Biona do one called Cuisine)

 

Ingredients - Topping

  • 100g Choco Munch
  • 70g Crispy Rice
  • 4tbsp chai seeds
  • 2tbsp of coconut oil, melted
  • 6 heaped tbsp of cocoa powder
  • 6tbsp maple syrup
  • 100g dates
  • 2tbsp water
Directions: 

Method

1) Place all the base layer ingredients in a food processor and blitz until combined and sticking together. Press the mixture into the bottom of a lightly greased 23cm x 30cm baking tin, approximately 5cm deep.

 2) For the topping, place the chia seeds, melted coconut oil, cocoa powder, maple syrup, dates and water into the food processor and blend until smooth.

3) Stop to taste and if you like it a bit sweeter add a little more maple syrup.

4)  Finally gently mix the Choco Munch and Crispy Rice into the chocolate mixture.

5)  Spread the chocolate mixture over the base layer and pop in the freezer for at least an hour. Once it is set cut into portions.  If it is very hot store in the fridge for up to 7 days in an airtight container, otherwise store at room temperature.
