Seriously Sublime Key Lime Pie

Preparation Time: 3 hours (including 2½ hours setting time)


150g Mesa Sunrise
1 397g can condensed milk
1 tbsp dried ginger powder

  • Butter base of a 22cm deep loose bottomed flan ring
  • Crush Mesa Sunrise lightly in a plastic bag with a rolling pin place in a mixing bowl.
  • Gently warm ½ the can of condensed milk in a heavy-bottomed pan & add ginger powder. Bring to the boil stirring continuously, until it changes colour to a light golden brown. Stir quickly into Mesa Sunrise and combine thoroughly. Add Mesa Sunrise mixture to flan ring, press down firmly and place in fridge (cool for ½ hour).
  • Whisk double cream into soft peaks, add the rest of the can of condensed milk and whisk in the lime juice and zest. Keep whisking for 1 -2 minutes.
  • Pour over the base and place in fridge for 1 hour to set.
  • Cut up the jelly cubes and place in jug.  Simply cover the cubes in boiling water and stir until dissolved. Top up to 300ml with cold water.
  • Gently pour the jelly mix over the cream topping. Pour the jelly over the back of tablespoon which helps stop dents forming in the mixture). Put back in the fridge for another hour to set.
  • Warm a sharp knife under the hot tap and use to release the edges of the pie in the flan ring. Remove the outer ring and cut into slices to serve.
